Dark Spirits Gift Box: 100% Unmalted Barley Whisky, Birch Barrel Rye Whisky, Aged Rum

Our Annual Dark Spirits Gift Box features three 200mL bottles of selected barreled spirits. It’s a great way for us to make our small and experimental batches available to as many people as possible, while giving a preview of some exciting projects we have underway.

• 100% Unmalted Barley – Most whisky drinkers are familiar with the big flavour that malted barley delivers from the barrel. The less common, unmalted barley is no different. In the bottle, the rich golden colour shines bright, predicting the strong caramel notes and apple aroma. Expect a thick mouthfeel and smooth finish. This is the most decadent whisky we’ve ever produced, and we’re looking forward to releasing it again in the future as more barrels mature.
• Birch Barrel Rye – This is our most interesting small batch whisky project yet. We loaned an empty whisky barrel to our friends at the Canadian Birch Company so they could produce some whisky infused birch syrup. We then took the barrel back and filled it with rye. The result was an incredible dessert whisky. Birch syrup is produced in the same way as maple syrup, but is less sweet and has a much more complex flavour profile. We’re already looking forward to next year’s barrel!
• Aged Rum – This year’s bottling of rum was special. With an extra year in the barrel, it became smoother and more aromatic than previous batches. The combination of fancy and blackstrap molasses still delivers bold flavour, but now in a more refined way. It’s great in a simple rum and coke or in Tiki cocktails, but it’s made a huge leap to become a spirit that can be sipped neat or over ice.
